High with proteins and Low in Carbs: Crispy Bacon Egg Muffins

The Secret Ingredients:

  • 2 Tbsp. ghee
  • 4 eggs
  • 2 Tbsp. water
  • 2 Slices of bacon
  • 1 Yellow pepper
  • ½ Small carrot
  • 3 Ounces of broccoli
  • ¼ Teaspoon of salt
  • 4 Muffin cups
  • 4 Paper muffin liners (optional)

The Process:

  1. Preheat the oven to 350°f.
  2. Grease the muffin cups with the ghee; or line the cups with the paper muffin liners, if preferred.
  3. Chop all the vegetables.
  4. Place the two slices of bacon in the oven for 5 minutes or until done.
  5. Process the bacon in a food processor.
  6. Beat the eggs in a bowl and add all the ingredients.
  7. Pour this mixture over the 4 muffin cups.
  8. Bake for 15 minutes.
  9. Serve and enjoy!


  • You can substitute the ghee with coconut milk.
