Chicken Tomato Soup with Carrots and Parsley

  • 1 medium carrot
  • 4 Tomatoes
  • 2 Onions
  • 1 Tbsp. coconut oil/ghee
  • 1 Chicken breast
  • 1 tsp. ground cumin
  • 2 Tbsp. coconut milk
  • ½ cup of fresh parsley
  • 2 cups of water


  1. Thinly chop all the vegetables and the parsley.
  2. Cut the chicken breast into small squares.
  3. Heat a saucepan with 1 tbsp. of coconut oil.
  4. Add the chopped chicken and cook for one-minute stirring constantly.
  5. Add the rest of the ingredients and stir one minute more.
  6. Add 2 cups of water to the saucepan and then add the rest of the ingredients.
  7. Let it boil until the chicken is ready; season with sea salt.
  8. Enjoy!


  • You can substitute carrot with one sweet potato.
