Tempting Almond Chocolate Lollipops

No wonder, we all grew up as a serious ice cream addict. Ice creams have always been a number one priority and close to our heart, leaving the age aside. Popsicles are a bit different than straight up ice cream, mostly while considering its texture. Almonds are just incredible and when combined with coconut they taste like never before. Here is a quick indulgent recipe for you that adds all of your favorite things together; you have almonds, ice-cream, dark chocolate and a lot more.

Ingredients

  • 4 ounces of 75% dark chocolate
  • 1/2 cup coconut milk
  • 2 eggs
  • 1 cup almond flour
  • Pinch of sea salt
  • ½ teaspoon vanilla extract
  • ¼ teaspoon baking powder

Vanilla Cover Ingredients

  • ½ cup coconut butter
  • 2 tablespoons honey
  • ½ teaspoon vanilla extract

Chocolate Cover Ingredients

  • 3 ounces of 75% dark chocolate
  • 1 tbsp of raw honey

Process

  1. Preheat your cake pop maker
  2. Heat a saucepan over low heat and melt chocolate and coconut milk.
  3. While melting, beat 2 eggs in a mixer until they are fluffy.
  4. Stir in coconut milk and chocolate to the eggs and mix well.
  5. Stir in almond flour, sea salt, vanilla extract and baking powder.
  6. Mix well until there are no crumbs.
  7. Pour the batter into the wells of the cake pop maker ensuring to fill higher than the halfway point.
  8. Close the lid and cook for 5-6 minutes, open the lid and turn your cake pops over.
  9. Close the lid and let cook for 2-3 more minutes
  10. Remove from the cake pop maker and insert the sticks and place everything in the freezer for 20 minutes
  11. Heat a saucepan over low heat and add all the vanilla cover ingredients. Mix well.
  12. Heat a saucepan with the chocolate cover ingredients and mix well until perfectly combined.
  13. Dip some of the almond chocolate lollipops over the chocolate glaze and some over the vanilla glaze.
  14. Enjoy!

  • You can substitute coconut milk with almond milk.
